Here is my latest confession:
The holidays and my wreckless eating habits have taken a toll.
A lady at the grocery store the other day
asked me when my baby was due.
Uh...not preggo, sorry!
It's shameful and I'm over it.
So, I am back on Weight Watchers...kinda.
In an effort to lose weight without getting grouchy,
I am trying all kinds of healthy recipes of foods that I love to eat.
That led me to the question,
Can you lose weight while stuffing your face with pasta?
I ask these kinds of questions because I care.
I decided to give it a shot by making this super easy recipe
from the December 2010 issue of Cooking Light Magazine.
Not only did I lose weight but it was super yummy.
I know this because my husband smacked my butt
as I was cleaning up the kitchen after dinner,
which as I have stated before is
a sure fire sign that the meal was a success.
I thought that I would pass it along
and maybe it would be lucky for you too.
Enjoy!
{You know that this is a Cooking Light photo, right?
Mine looked a bit more wilted and less fancy.
You're welcome for posting this pic instead.}
Sausage, Tomato, and Arugula Fettuccine
Ingredients
- 1 (9-ounce) package refrigerated fettuccine
- 1 tablespoon olive oil
- 6 ounces Italian turkey sausage
- 2 teaspoons minced garlic
- 1 pint cherry tomatoes
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 3 cups baby arugula leaves
- 2 ounces pecorino Romano cheese, shaved
Preparation
1. Cook pasta according to package directions, omitting salt and fat. Drain in a colander over a bowl, reserving 2/3 cup cooking liquid.
2. While pasta cooks, heat oil in a large skillet over medium-high heat. Remove casings from sausage. Break sausage into bite-sized pieces and add to pan; cook 3 minutes or until browned, stirring frequently to crumble. Add garlic; cook 30 seconds, stirring constantly. Add tomatoes, salt, and pepper; cover and cook 2 minutes. Mash tomatoes with the back of a wooden spoon to break them up. Cover pan; reduce heat to low, and cook 3 minutes. Remove pan from heat. Add pasta, reserved 2/3 cup cooking liquid, and arugula; toss well. Sprinkle with pecorino Romano.

Looks yummy! Thanks.
Yeah...I am still trying to come to grips that I have to use my one free hour (nap time) to exercise. Boooo, weight!
That looks wonderful... seriously
Oh my gosh that looks incredible. I am such a sucker for pasta. It's in my genes. I'm thinking about subscribing to Cooking Light this year...I finally stopped buying whole milk for myself and switched to fat free (ugh, but necessary).
p.s. I get asked ALL the time if I am pregnant. My OBGYN told me my ab muscles are "shot" so I'll always have a little pooch even if I manage t lose weight. I've learned to love spanx. :)
xo
Oh gosh, I wish you luck. I've been using WW for years and years to maintain weight and it's always worked for me. For some reason...for the last 3 weeks since I've been on it...I've gained every week. I'm scared sick, I tell ya! So I can't get the Christmas weight off! I need a private consultant.
This dish looks delish!
That looks delicious! I am actually prego, but trying not to overindulge like I have in the past. I am going to try and see if this will pass the "butt smack test" in our house!
That looks so good! I'll have to try it out!
That sounds yummy!
That is a winner, for sure!
=)
Looks so good!!! Love the smacking your bum to let you know it was a good dinner. lol!
That sounds delish (but minus the tomatos for me)! And, I just heard a rumor going around my office that I'm pregnant. I'm Not. Nor have I ever been... I just REALLY enjoyed Christmas.
Yum! I love pasta!
I really need to join WW again. Sigh.
mmmmmmm!
well you do know how to sell a dinner - love it ;-)
Uh, I read your post and sunk into my seat.
We are getting a five dollar hot n ready for dinner. gross. but oh, so good. sorry, i'll stop.
you are my hero :)
you got this thing, girl!
Basically, no one should ever ask if anyone is pregnant unless they know for sure. That's what I think anyway.

This is seriously the funniest thing I have EVER heard. The Italians would be proud of you. We eat pasta at least twice a day, its all fresh & good for you with smaller portions than what we have in the US.
Buon appetito!
That pasta looks great! I finally learned that eating can be part of losing weight if done correctly. I highly recommend the book Full: A Life Without Dieting by Michael Snyder, M.D. for this reason. He offers a fresh approach to dieting, eating and being healthy and it worked great for me.
Thanks so much! It sounds delicious and I'm definitely going to try it.
