I recently discovered the most awesome Blog called Bakerella.
I needed to make something tasty for
a Mother's day tea at Griffin's school and just
had to make these Red Velvet Cake Balls.
They are SO delectable and scrumptious that I am
passing the recipe onto you!

Red Velvet Cake Balls
1 box red velvet cake mix (cook as directed on box for 13 X 9 cake)
1 can cream cheese frosting (16 oz.)
1 package chocolate bark (regular or white chocolate)
wax paper
1. After cake is cooked and cooled completely, crumble into large bowl.
2. Mix thoroughly with 1 can cream cheese frosting. (It may be easier to use fingers to mix together, but be warned it will get messy.)
3. Roll mixture into quarter size balls and lay on cookie sheet. (Should make 45-50. You can get even more if you use a mini ice cream scooper, but I like to hand roll them.)
4. Chill for several hours. (You can speed this up by putting in the freezer.)
5. Melt chocolate in microwave per directions on package.
6. Roll balls in chocolate and lay on wax paper until firm. (Use a spoon to dip and roll in chocolate and then tap off extra.)
I also only melt a few pieces of chocolate bark at a time because it starts to cool and thicken. It’s easier to work with when it’s hot.

I love red velvet cake. I love any cake for that matter but Red Velvet is my favorite! These look divine.

OH my word those look wonderful and fattening lol. Just a hint for you, to thin down chocolate simply add some parrafin wax, which can be purchased at any grocery store usually in the baking aisle. The paraffin thins down the chocolate without affecting the flavor, and still allows it to harden. This way you can dip more in a shorte amount of time. Simply melt the chocolate and paraffin all together.
Uh yeah, I'm going to have to skip work today and make those and eat them all before anyone arrives home!
My SIL makes these around Christmas time. She knows how much I love them - so she makes me an extra secret batch to keep away from the kids!
I've seen this recipes in some variations, but this looks truly amazing. Great, now I'm craving cake.

Oh my gosh. Is THAT all it takes to make these things? I've had them before, and I thought they were way beyond my culinary abilities, so I didn't even ask for the recipe.

Oh I'm a HUGE Bakerella fan. I'm sure your cakeballs will be a BIG hit. I made her Hello Kitty cake pops for my girlie's birthday. But those things are so sweet they'll rot your teeth out!
I changed up the recipe a bit - cutting the frosting by 1/2 and substituting cream cheese. Just as rich, but not quite as sweet. But they do need to be refrigerated. As for thinning the chocolate, you could also add a little *pure* cocoa butter (like Jason's, not Palmers - it's got other stuff in it). That'll thin it, but still keep it tasting and feeling like melt-in-your-mouth chocolate.

You're my hero. My version of "home-baked" for school? Store bought cupcakes, which I take out of the plastic container and put on a nice plate from my kitchen. Super Mom, right?
I've been wanting to try to make these. My husband and I don't really eat cake, but they look like fun to make. I'm waiting for some kind of event to make them for. Maybe next time we host a UFC fight, I'll make these for everyone to nibble on.
I LOVE Bakerella.... I made a chocolate version of these for a work bday party, and used my cake decorating tips to inject rasberyy peserves into them before coating them in chocolate. To. DIE. FOR.
Also, if you add a touch of veg. oil to the chocolate, it keeps is fluid, and makes it shinier!!
