Holy Cake Balls!

(Not my photo, I was too busy licking the bowl of batter up
with a spoon to grab my own camera. This is from Bakerella!)

I recently discovered the most awesome Blog called Bakerella.
I needed to make something tasty for
a Mother's day tea at Griffin's school and just
had to make these Red Velvet Cake Balls.
They are SO delectable and scrumptious that I am
passing the recipe onto you!
Now go make these for your Mama!

Red Velvet Cake Balls
1 box red velvet cake mix (cook as directed on box for 13 X 9 cake)
1 can cream cheese frosting (16 oz.)
1 package chocolate bark (regular or white chocolate)
wax paper

1. After cake is cooked and cooled completely, crumble into large bowl.
2. Mix thoroughly with 1 can cream cheese frosting. (It may be easier to use fingers to mix together, but be warned it will get messy.)
3. Roll mixture into quarter size balls and lay on cookie sheet. (Should make 45-50. You can get even more if you use a mini ice cream scooper, but I like to hand roll them.)
4. Chill for several hours. (You can speed this up by putting in the freezer.)
5. Melt chocolate in microwave per directions on package.
6. Roll balls in chocolate and lay on wax paper until firm. (Use a spoon to dip and roll in chocolate and then tap off extra.)

I also only melt a few pieces of chocolate bark at a time because it starts to cool and thicken. It’s easier to work with when it’s hot.

Freakshow Friday: 100 Acre Wood of Freaks Edition

My best friend will be the judge and she's one hilarious freakaziod. So, bring it! Here is the week's photo, being that it's Mother's day weekend, I decided to pick a photo that demonstrated the crazy lengths that a woman can go to in an effort to bond the family together. I feel so bad for the husband.

You got a better one for me?

If so, you may just when this awesome award

The ever so lovely Nie.

I hope that all of you have discovered Stephanie Nielson's Blog called The Nie Nie Dialogues. I stumbled upon her Blog when most people did, in the weeks after her and her husband Christian survived a plane crash. Both of them were in a coma and badly burned. Stephanie was burned on 80% of her body. They both lived through it. That's right, she lived...oh boy, does Stephanie ever know how to live.

Something about their story grabbed at my heart. I cried for them and I prayed for them. I thought of them at stop signs as I drove around town. I would take that moment to pause and pray for complete strangers. They touched my life and still do to this day.

I have celebrated from a distance as Stephanie's set a goal for herself to be strong enough to
hike up the Y Mountain at the one year anniversary of her crash. I have cried as she bravely revealed her new face that she had been hiding for so long. I have shed many tears for the ever so lovely Nie.

I had to share this little video with you that she posted over at her Blog. It is an amazing testament to her beauty and strength. Although I myself am not Mormon, I just love the message that Stephanie has for the world. She is such an inspiration. If you have yet to meet her virtually, I suggest that you take the time to go into her archives and start at the begining. Her story is so enchanting, heartbreaking, and uplifting.

I love you Nie...even though we've never met!

The Stay at Home Mom Chronicles: Weekend trips to Chuck E Cheese

I'm realizing that my days around here seem to run together.
Ordinary moments unfold around me daily
and I need to stop and relish in them.
One day, my boys will be out living life
and I will miss these everyday experiences.

So, I am taking the time to document
the simple moments that pass between us.
I'm calling this little collection of memories
The Stay At Home Mom Chronicles.

Sunday 9:00 am : Our weekend trip to Chuck E Cheese

We made this deal with Griffin that he can earn Chuck E Cheese tokens
for making "good choices" during the week. He can earn up to four tokens a day.
On the weekend (yes, just about every weekend)
he and Roger take a trip to spend up his hard earned tokens.

This reward system totally works for him.
He can be teetering on the edge of getting into trouble and all
I have to say is "Chuch E Cheese token!!"
He'll stop dead in his tracks.

We all went as a family every Sunday morning.
If you go at 9 am, no one is there
because most families are off worshipin' somewhere.
We call our Sunday morning trip going to "Chuck E Cheese Church"
because we somehow became heathens as of late.

After I had Koen, I quit going.
We tried taking Koen once and he freaked out.
It was just too noisy and crazy for a baby.
So, Daddy and Griffin would go
while Mommy and the baby stayed home.

Well...this last Sunday we all went
and Koen loved it.
It was a HUGE deal.
Griffin was so proud to show his little brother off
to all of the employees that have become our friends.

We had a great time.
Koen felt so big and scurried all over the place.

I think that it will be a weekly trip for the whole family now.
Except, I am campaigning to move it to Saturday morning.
I want to get this sweet family in church.
I have a feeling that God
doesn't hang out at Chuck E Cheese's on Sunday mornings.
He's got too many other important places to be.
